C is for Chili

Hmmmm. I just finished a bowl of leftover vegetable chili from last night’s dinner. Filling and savory–it hit the spot.

Food:
Lunch: Vegetable chili: kidney beans, black beans, tomatoes, celery, carrots, garlic, and onions.

This just in:
“Snow Spotted in the Hill Country.” LOL! That’s the actual headline at KXAN.com right now. I know this is Texas, but still….it’s not Bigfoot we’re talking about here.

Mood:
Good–ready for our visit to Lindsey and Joey’s!

Food:
Breakfast: Fresh juice made from carrots, lemon, celery, ginger, apple.

Dinner last night: I made vegetarian chili with kidney beans, black beans, 4 sliced carrots, 1/2 chopped onion, 1 diced tomato, and 1/2 orange bell pepper. I added some cayenne pepper and ancho chili powder for a bit of kick. Makes 4-6 servings.

Dessert: Ohhhhhh. Looks like I was trying to prove my theory as stated in my previous post about baking in the morning. I made a chocolate covered cheesecake last night to take to Lindsey and Joey’s, and I had plenty of chocolate chips and licked the bowl, spoon, spatula, and mixing attachment before putting in the sink to soak.  Plus I had a little invention I am now calling chocolate cheesecake s’more—cheesecake filling (before the eggs) and ganache sandwiched between graham crackers.

The cheesecake was based on this recipe from Epicurious.com.  I cut the amounts in half, and didn’t add any of the coffee-related ingredients or the molasses. And for the crust, I used graham crackers rather than chocolate waters, and skipped the brown sugar and nutmeg. And rather than doing a sour cream icing with ganache lattice worked, I just poured ganache over the top.

This is the ganache. Ganache is SOO easy to make. You just bring cream to a boil, remove from heat, pour onto chocolate chips, and stir until smooth.

Fitness Yesterday:
Day off. I came home extremely tired and wasn’t up for a work out. I slept until 6:40 this morning–I needed the zzzz’s.
