Mood:
Good. I went to bed at 9:00 (fell asleep on the bed–woke up at 1:00 am to brush the teeth!) and got up at 6:45.

Food:
I had 2 and a half spelt pancakes topped with sliced strawberries and agave nectar. The recipe was super easy, adapted from Angela’s of Oh She Glows.

Pancakes for two:

  • 1 cup spelt flour
  • 1 t cinnamon
  • pinch sea salt
  • 2 t baking powder
  • 1/2 c whole milk (or milk of your choice)

-Mix dry ingredients in a medium bowl. Add milk, and stir well. Batter should be smooth and have a somewhat thick consistency (if you like your pancakes nice and thin, add more milk to the batter).
-Pour batter onto a greased skillet, over medium heat.
-Flip pancake once bubble appear in batter and edges appear crisp and firm.
-Heat other side, and serve with topping of your choice.
-Makes 5 big pancakes.

Dinner recap:  A bed of fresh spinach topped with…candied pecans…feta cheese…..

….as well as sliced mushrooms and strawberries.

To be honest, the looks and sounds a lot better than it tasted. It was kind of ho-hum, because the spinach was dry. I thought that with all the flavors in the salad (strawberries, feta cheese, candied pecans, mushrooms) that no type of dressing was necessary, but I was wrong.

Fitness:
Fitness? It’s been days since I’ve exercised regularly. I blame it on the trip to Spain and trying to get back into the groove of things here at home…. My goals today though are a workout at the gym and a run home.

Quite possibly….no, without a doubt, the ugliest photos on this blog. What happened?!?! Hahahaha! Ug-ly.

N-e-waze….it was a great morning! I did a bit of housecleaning, ran 6.2 at Townlake (ran into Jenni from OutofControlFatroll.com again!), where, might I add, it was bitter cold! The air was burning cheeks, ears, and fingers. Brrrr! It was a great run though, and not a lot of people out, which can be nice. Afterwards I headed to Gold’s Gym Downtown for a quick shower, then met up with Kate and Baby D at Magnolia Cafe.

The camera does lie, because those pancakes were freaking awesome. Coffee was good, too. And not only is MC super chill, but it’s cheap! 2 huge pancakes for $3.95. Me likes.

Food:
Post-juice: Two slices of Lucas’s homemade banana bread.
Lunch: To heck with the balanced meal! 1 cup of coffee with cream and sugar and 2 big-as-yo’-face buttermilk pancakes with sliced cinnamon apples and chopped pecans folded in. Topped with countless tbs of maple syrup. Oh boy.

Kate and I chatted about this and that, including our plans to start a healthy living meet-up group on MeetUp.com. I am excited! We are in the beginning stages, but I will post more info once things are rolling. Our goal for the 1st meet-up is in early March…..Meanwhile, Baby D won the affections of two nearby fellas. (I think he was just tired of the women in his company).

Next up was a stop at Whole Foods. They have a chocolate stand?kiosk?counter? where they sell fudge, truffles, espresso beans, and more. It’s no doubt my favorite spot in the store. Amongst the eye candy were some beautifully decorated candied apples. One was covered in pink and white candied crystals–gorgeous! But at $7.99 a pop, I think it should just be admired from afar.

I plan to have another productive day, I’m off to do a few things around the house, and later some writing…..
