Mood:
Happy! My lifelong friend Lindsey and her husband/soulmate Joey are coming in tonight for a weekend visit. It’s going to be a fun weekend!

Food:
Breakfast: A big ol’ bowl o’ oats.

I measured out 1/3 cup of these steel cut oats….

…and added them along with 1 cup of water to a medium-sized pot, over low heat.

Then I threw in 2 tbs of rolled oats, 1 tbs of oat bran, and 2 tbs of raisins. (The cinnamon was added at the very end)…..

I let the mixture cook for about 7 minutes. Then I caused some excitement by adding 1/2 cup rice milk….

A few more minutes, then I turned off the heat. I added 1 mashed banana…

…a generous tbs of creamy peanut butter (’cause I’m nice & giving like that)…

…and 4 tbs of Ezekiel Original, for a bit of texture.

Isn’t it beautiful? Makes me so proud. Breaks my heart to have to eat it. Not really.

8 Mile

Fitness:
I mapped out a route earlier on Google maps and set out for a 6 mile run (to the Texas State Capitol and back). Only, it turns out it was an 8 mile run! Double checked the mileage when I came back, and it was four each way. Sweet! No wonder my legs were like J-E-L-L-O!

A great run–through historic Hyde Park, UT campus, and a turn around at the Capitol near the edge of downtown. So many people out and about, something that I love about living in this area of Austin.

Food:
Dinner: Strawberry Fields Salad…Fresh spinach leaves tossed in olive oil and topped with sheep’s cheese, candied pecans, and sliced strawberries.

Food:
Lunch: What an improvement from last night’s salad! The exact same ingredients, exact this time I tossed the spinach leaves in olive oil, salt, and pepper. It made a world of difference. I love all of the different flavors working together here. Delicious.

Strawberry Fields Salad:
-slice strawberries, mushrooms
-candied nuts, chopped or whole (pecans or walnuts)
-crumbled feta cheese
-fresh spinach leaves
-olive oil, salt, pepper

Mood:
Good. I went to bed at 9:00 (fell asleep on the bed–woke up at 1:00 am to brush the teeth!) and got up at 6:45.

Food:
I had 2 and a half spelt pancakes topped with sliced strawberries and agave nectar. The recipe was super easy, adapted from Angela’s of Oh She Glows.

Pancakes for two:

  • 1 cup spelt flour
  • 1 t cinnamon
  • pinch sea salt
  • 2 t baking powder
  • 1/2 c whole milk (or milk of your choice)

-Mix dry ingredients in a medium bowl. Add milk, and stir well. Batter should be smooth and have a somewhat thick consistency (if you like your pancakes nice and thin, add more milk to the batter).
-Pour batter onto a greased skillet, over medium heat.
-Flip pancake once bubble appear in batter and edges appear crisp and firm.
-Heat other side, and serve with topping of your choice.
-Makes 5 big pancakes.

Dinner recap:  A bed of fresh spinach topped with…candied pecans…feta cheese…..

….as well as sliced mushrooms and strawberries.

To be honest, the looks and sounds a lot better than it tasted. It was kind of ho-hum, because the spinach was dry. I thought that with all the flavors in the salad (strawberries, feta cheese, candied pecans, mushrooms) that no type of dressing was necessary, but I was wrong.

Fitness:
Fitness? It’s been days since I’ve exercised regularly. I blame it on the trip to Spain and trying to get back into the groove of things here at home…. My goals today though are a workout at the gym and a run home.

Mood:
“What are you looking at?”….and sometimes “What a beautiful sunshiney day!” and still “zzzzzzz”

Food:
Breakfast: Lucas made me a delicious fruit juice (apples, oranges) with carrots. Later, I had a fabulous bowl of oatmeal:
-1/3 cup steel cut oats
-1 cup water
-1/3 cup soy milk
-2 tbs Ezekiel Original
-1 tbs ground sesame
-2 tbs plump raisins
-1 tbs crunchy peanut butter
-a generous sprinkling of cinnamon
-1 tbs agave nectar



Green heart:
We ordered a new set of checks from our bank, but in the address printed on the checks, the zip code is incorrect. I thought about calling the bank up to request a new set with the corrected zip code, but that would mean we’d have to toss the checks. A waste of paper. So I decided we could settle for just scratching out the one wrong digit in the zip code and writing the right one above it. Classy? No. Green heart? Yes!

Zombie to the 10th degree

Food:
Breakfast: I made a batch of oats-to-go. Today’s oatmeal had
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/3 cup milk
-2 tbs rolled oats (non-organic)
-2 tbs Ezekiel Original
-a sprinkling of cinnamon
-1 and 1/2 tbs crunch peanut butter
-1 tbs agave nectar

I love the addition of peanut butter. It makes the oatmeal creamy and flavorful.

Monday.

Enough said.

SMS: Roasted Pecan Cake with Caramel Orange Marmalade and Burnt Orange Buttercream

I loved how the cake itself turned out. It’s moist, flavorful, and simply delicious. The buttercream frosting didn’t turn out so well, it tasted way too buttery (even after I left out 1 stick of butter from the original recipe) and it was somewhat broken (maybe I overmixed or undermixed)….I made my own orange juice and marmalade, which turned out a bit bitter, I think due to my oranges…..Overall a fun recipe to make, but my fault it didn’t turn out as good as it should have been! The cake was still quite tasty, and I enjoyed a large slice, of course.
