I did, I did!

I did do a workout today!

Fitness:
-Ran 25 minutes with Lindsey. Lindsey is an awesome runner, light as a feather and quick as lightening. She had to slow her roll when jogging with me.
-10 minutes of abs & core exercises

Food:
Snack: A small apple and a couple of mint M&Ms
Dinner: We went out for sushi. I had edamame, miso soup, a California roll and a tuna roll.
Dessert: A slice of chocolate covered cheesecake and crustless german chocolate pie with a dollop of whipped cream

After dinner, we played some pool back at L & J’s….

I got tired of losing, so we did a bit of posing instead….

Now we are about to watch Pan’s Labyrinth. Love this movie!!

Mood:
Good–ready for our visit to Lindsey and Joey’s!

Food:
Breakfast: Fresh juice made from carrots, lemon, celery, ginger, apple.

Dinner last night: I made vegetarian chili with kidney beans, black beans, 4 sliced carrots, 1/2 chopped onion, 1 diced tomato, and 1/2 orange bell pepper. I added some cayenne pepper and ancho chili powder for a bit of kick. Makes 4-6 servings.

Dessert: Ohhhhhh. Looks like I was trying to prove my theory as stated in my previous post about baking in the morning. I made a chocolate covered cheesecake last night to take to Lindsey and Joey’s, and I had plenty of chocolate chips and licked the bowl, spoon, spatula, and mixing attachment before putting in the sink to soak.  Plus I had a little invention I am now calling chocolate cheesecake s’more—cheesecake filling (before the eggs) and ganache sandwiched between graham crackers.

The cheesecake was based on this recipe from Epicurious.com.  I cut the amounts in half, and didn’t add any of the coffee-related ingredients or the molasses. And for the crust, I used graham crackers rather than chocolate waters, and skipped the brown sugar and nutmeg. And rather than doing a sour cream icing with ganache lattice worked, I just poured ganache over the top.

This is the ganache. Ganache is SOO easy to make. You just bring cream to a boil, remove from heat, pour onto chocolate chips, and stir until smooth.

The crust with the first layer of ganache. The filling goes on top of that. After it’s baked, you add another layer!

Fitness Yesterday:
Day off. I came home extremely tired and wasn’t up for a work out. I slept until 6:40 this morning–I needed the zzzz’s.

Tree Lights

I just sat with my hands poised over the keys, fingers absolutely still. No words came to me for the above title, as if it matters. But really, how hard is it to title a post? Why did I freeze like a deer in the highlights? I stared at the Christmas tree into the bright of the white lights that are woven through it’s branches. Nothing. Ham? Ham sandwich? Then…eureka! Tree Lights! So there you go. : )

An eventful Friday night. That’s to be read with sarcasm, in case you didn’t relate it to the above, wink wink.

Ouch, this is painful. For you. Let’s do this and be done with it.

Mood:
Groggy. A few tears were shed this evening, followed by me splayed out on the couch. Followed by dozing off. Followed by an hour and a half nap. I woke up a bit before 8:00. Oh, I am definitely Zombie right now.

Fitness:
Ran 4.5 miles. With the sun setting at 5:30, it’s hard to get a run in after work. The treadmill at the gym is always an option, but my gym becomes a hot, humid, smelly zoo between the hours of 5:00 and 8:00 pm. Who wants in on that? Not me. So once or twice a week I will pack a bag with running clothes and shoes, leaving most of my other things behind at home (i.e. cell phone, wallet) so I can run home w/out any baggage. It’s a nice run, with the exception of the couple of fast food joints that I have to pass that render me temporarily suffocated with their greasy, chemical smells of fried fish and chinese food.

Food:
Early evening snack: a few teensy weensy bites of a deliciously rich and chocolatey brownie, a taste of a blueberry muffin, and half of a tiny cookie, all leftover treats that Lucas had brought from his holiday party at work.

After my shower*, I had a bowl of vegetarian chili, also a leftover from the party. It had a nice variety of beans as well as some baby carrots, muy rico (that means delicious in Argentina). And after my unexpected nap, I had a ham sandwich with cheese and tomato slices.

Green heart:
*Black heart. I am bad, bad, bad at wasting water and energy in the shower. I LOVE a long, hot shower. All of my showers are long, hot showers. Green heart? Oh, how the mighty have fallen/are falling!! Maybe short, cold showers can be added to my list of New Year’s resolutions? What’s that? The list is full? There is a waiting list for the list? Whew…
