Oh, you’re in for a treat. Figuratively and literally.

This is an easy recipe. Five ingredients! Need I say more?

Ingredients:

-6 ounces best-quality solid semisweet (58%) chocolate
-One 14-ounce bag sweetened coconut
-Zest of 1 orange
-1 cup sugar
-3 large egg whites

Before you start:
Position a rack in the center of your oven. Preheat the oven to 325F. Line a cookie sheet with parchment paper or aluminum foil.

1. Using a serrated bread knife, finely chop the chocolate. Set aside.
2. In a large bowl, combine the coconut and zest, and rub together with your hands. (This will break up the coconut and release the orange oils).
3. Stir in the sugar and chocolate to the coconut and mix to combine. Add the egg whites. Use your hands to mix until everything is coated and the egg whites are distributed evenly.
4. Using a 1 ounce cookie scoop, firmly pack the dough into the schoop and unmold about 2 inches apart onto the prepared cookie sheet. Bake for 25 to 30 minutes, or until the cookies are goldeb brown. remove to a wire rack to cool completely.

The cookies keep in an airtight container at room temperature for up to 3 days. For longer storage, wrap in plastic wrap and refrigerate for up to 5 days, or freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Do not unwrap before defrosting.

I love these three flavors together. Although my macaroons turned out a bit dry (I think I may have put in too much coconut or baked them for too long), they were still delicious! Enjoy!

Mood:
Excelente. I got such a good night’s sleep, and that makes a world of difference in how my day goes…I went to bed last night at 9:15, and got up at 6:15 this morning.

Food:
Breakfast: Fresh juice and later whole grain toast topped with peanut butter, and a cup o’ tea.
Mid-morning snack: Hot mocha
Lunch: Leftover Happy Rice, lentil salad, garbanzo salad.


Dying to know what I’ve been dining on the past day or so? Were you lying awake at night, wondering?

I know, I know.

So here’s a (partial) recap!

(Note: That goo in the jar isn’t a science experiment. It’s breakfast. I ran out of to-go cups since I’ve been running home from work and leaving everything behind. The jar sufficed, although it didn’t keep the oats as warm as my travel cups do).

Tuesday- Ran 4.5 miles home from work
Wednesday- 55 minutes at gym
Thursday- I plan to work out after work…we’ll see!

SMS: Roasted Pecan Cake with Caramel Orange Marmalade and Burnt Orange Buttercream

I loved how the cake itself turned out. It’s moist, flavorful, and simply delicious. The buttercream frosting didn’t turn out so well, it tasted way too buttery (even after I left out 1 stick of butter from the original recipe) and it was somewhat broken (maybe I overmixed or undermixed)….I made my own orange juice and marmalade, which turned out a bit bitter, I think due to my oranges…..Overall a fun recipe to make, but my fault it didn’t turn out as good as it should have been! The cake was still quite tasty, and I enjoyed a large slice, of course.

Food:
Breakfast: A superb bowl of oats this morning. So creamy and flavorful!
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/2 cup whole milk
-4 tbs Ezekiel Original
-1/2 cup Kashi Go Lean CRUNCH!
-1 large banana, mashed
-1 tbs crunch peanut butter
-a sprinkling of flaxseeds
-cinnamon

No agave was necessary today. I actually forgot to put it in, and when I tasted the oatmeal, I realized it was sweet enough on its own. Sooo soooo good!

I put a small amount into this bowl (from a set of five….a Goodwill find from last year!) and ate it as I was rushing around getting ready. I took the rest as oats-to-go.

I’m a new member of the Sweet Melissa Sundays online baking group. My first recipe from this book will be a Roasted Pecan cake with Caramel Orange Marmalade and Burnt Orange Buttercream. Doesn’t that sound amazing?!?!
