Get yer carbs on

Today was over in the blink of an eye. I knocked out one creative writing assignment, but that was the only thing I managed to do in the three hours after lunch! Still a good day though….I got in a nice run at Town Lake, and we had a fun dinner with my parents and Liz and Jill.

A slow-as-molasses 10k at Town Lake…..The crowds were out today! Must be a lot of those folks in town for the marathon.

Snacks: Dried currants and an apple
Dinner: Salad greens with honey dijon dressing and a large portion of spaghetti with meat sauce and parmesan, homemade bread, and white wine. We had to carb up Mom and Jill for the big race tomorrow!

As per usual, credit goes to Lucas for this amazing feast.

Early morning tomorrow! Heading out at 6:00 am to support my Marathoners!

To-do list status:
run 6.2 miles at Town Lake
get truck we are borrowing for the alleged* move
do a major apartment cleaning/purge before we move (*assuming we are moving! still not definite!)
-creative writing assignments

Can we say PRODCUTIVE?!?!?! The highlight of the day was getting rid of tons and tons of papers that had accumulated in our filing cabinet. Once I got started I couldn’t stop—there was some major purging going on. Good purging. I also got together a decent stack of clothes to donate to Goodwill. Finally. (I’ve probably told myself, “Well, I might need that if…” a million times. It’s time to face reality that I will never wear that again!)….It’s not over yet though. There’s still more purging to do, but today was a great start.

The only thing left on my list is the creative writing assignment that is due tomorrow for my online class. I’m trying to decide between that and the updates I need to do to  my blog. I’m leaning towards the assignment–I didn’t do last week’s. (It’s ok–I’m auditing the class. You get to choose to do fun stuff like NOT doing homework!) But what’s the point in being in the class if I’m not going to work at it? Ahh-haa…..

Dinner: Leftover milanesa and mashed potatoes, and a salad.

I’m off to write creatively…..

Refreshed. Great night’s sleep! I fell asleep on the couch (again) after dinner…..crawled into a real bed around 10:00, woke up this morning at 9:00. Ahhhh!

Speaking of dinner….last night was amazing comfort food. More below…

Breakfast: A banana, and later a glass of fresh juice (3 oranges, 1 apple, some carrot, and a slice of ginger).

El vino did flow

If you can tell me what character from what t.v. show said that, I will send you a treat! You will be my hero if you know!

How does linguini with meat sauce sound to you? Yeah, that’s what I thought. It sounds pretty darn good.

Afternoon snack: Tangerine & a couple of dried Cali figs
Dinner: Linguini with meat sauce, by Lucas. And a glass of wine.
Dessert: We were thinking Amy’s Mexican Vanilla, but we’re too stuffed. I’m sure I’ll manage some chocolate before bedtime. I now have a gourmet stash! Yipee!

Note: Ever since we saw Food Inc. (oh, the horror!), we’ve  been buying grass-fed beef or beef that comes from reputable ranches (i.e. Niman Ranch). If you haven’t seen Food Inc, I highly recommend it! 🙂

Note: Yes, I did manage the chocolate, before I even finished this post. Scharffen Berger Extra Rich Milk Chocolate.

Gym-45 minutes of strength training (upper body & lower body)

Green heart:
This is the stack of paper that I keep at work to reuse. I save every little sheet of paper that crosses my desk (the luckies get a second life!)

Unless I have to print an official document, everything I print goes onto a paper that was once printed on before.

For example:
This flyer for a study abroad program in Mexico….

……has been reincarnated as a Facilities Use Request!! Thrilling!

Thanks for stopping by!
