Breakfast: Oats-to-go. Today’s oats had:
-1/3 cup steel cut oats
-1 cup water
-1/2 cup soy milk
-2 tbs rolled oats
-2 tbs Ezekiel Original
-2 tbs raisins
-1 tbs oat bran
-1 large banana, sliced
-1 tsp creamy peanut butter

Lunch: Leftover veggie pita and a carrot stick, and later a couple of Turkish figs.

Nothing to fancy planned for today. I’d like to go for a 4 mile run after work.

Green heart:
I almost took the car to work today, but when I admitted I had no good reason, I footed it over to the bus stop.

Breakfast: A cup o’ tea and a toasted onion bagel with two generous tablespoons of creamy peanut butter. I almost never eat bagels anymore, but I do love them, and when I saw the rows and rows of bagels (cranberry, chocolate chip, jalapeno, honey oat, you name it) staring at me from behind a glass case at Central Market, I had to take a couple home. I adore the onion & peanut butter combination. This stems from the days back at home when my Dad would buy the Blue Light Special onion bagels at Super K-Mart and would slather them with crunchy peanut butter. It’s a weird combo, but my tastebuds are in love.

Yesterday recap:
Lunch: Half of a leftover brie & smoked turkey sandwich, half a cup of chicken tortilla soup, a side of butter & sugar sweet potatoes.
Snack: Apple slices topped with creamy peanut butter and raisins.

Dinner: Half of a pork fajita burrito and chips and salsa at Chipotle
Dessert: Candied pecans and half of a chocolate wafer; tea

Nothing since Wednesday (I’m counting moving day as a day of mega fitness)….I plan to go on a run today in the new ‘hood! The big idea was to go for a run this morning, but I just got so into unpacking…aiming for the afternoon now.

Makes my heart flutter: Chipotle shares not only our food philosophy but also a love for Mother Earth. I snapped this photo, although my operation was soon shutdown by an off-duty employee….”Chipotle doesn’t want to have pictures all over the place.” Whatever, man. It’s called free publicity! Don’t you know I have thousands following this blog? Well, maybe it’s more like four people, but whatevs….I still love you, Chipotle.

Breakfast: Oats-to-go. Todays’ oatmeal had:

-1 carrot, shredded
-3 heaping tsp ground sesame
-2 tbs plump raisins
-generous drizzle of agave nectar
Lunch: Leftover pasta & tomato sauce.

The week went by so fast. Awesome.

Excelente. I got such a good night’s sleep, and that makes a world of difference in how my day goes…I went to bed last night at 9:15, and got up at 6:15 this morning.

Breakfast: Fresh juice and later whole grain toast topped with peanut butter, and a cup o’ tea.
Mid-morning snack: Hot mocha
Lunch: Leftover Happy Rice, lentil salad, garbanzo salad.

Dying to know what I’ve been dining on the past day or so? Were you lying awake at night, wondering?

I know, I know.

So here’s a (partial) recap!

(Note: That goo in the jar isn’t a science experiment. It’s breakfast. I ran out of to-go cups since I’ve been running home from work and leaving everything behind. The jar sufficed, although it didn’t keep the oats as warm as my travel cups do).

The day has actually been good, in spite of my state of zombiness. It’s been busy so the hours have flown by…..I went out for some fresh air during my lunch break and walked to the bank to get some new checks, but other than that, I’ve been a busy bee.

I did find time to eat not one, but two cookies that my co-worker brought up from a meeting, and as a bonus, a brownie. What the cuss? Yesterday it was Cinnabons, and I totally resisted. Today, it was cookies and brownies, and I waved the white flag without even putting up a fight. Seriously though, when I’m tired, I feel like eating whatever, and usually I do. I wonder if that happens to other people?

Lunch: I started eating lunch at 10:30; not really hungry, but in an eating-mood. Lunch was couscous from last night–good, good, good.
Snack: Banana; 2 cookies and a brownie; cup of tea

Lucas and I spent the later part of the morning and most of the afternoon at the Greenbelt. Perfect weather for a bit o’ this and that: walking, relaxing, snacking, journaling.

We packed our backpacks and hit the road. The Greenbelt entrance that we like is in southwest Austin, about a 20 minute drive. Not a lot of people were out at 11:00 this morning, which made it all the more serene. We hiked down to the river, then walked along the trail for about .75 mile to Sculpture Falls. There we sat upon a large rock and took in the scenery: big boulders, naked trees, blue-green river water and frothy white falls. We shared a small snack, then headed back the way we came towards another waterfall, where we had a few snacks and relaxed in the hammock. What a perfect afternoon! Yet another one of the reasons I love Austin. The great outdoors is right at our fingertips.

The afternoon, in pictures….

Snacks: I ate one Medjool date, about 1 and a half slices of banana bread, 1 and a half tortillas (non-organic), and various spoonfuls of white bean salad (olive oil, garlic, parsley).
Late lunch: Leftovers from last night! I really took my time eating, savoring each bite and enjoying the wonderful flavors. Basmati rice, lamb curry, chicken coconut curry, spinach naan, and plain naan. I don’t know if it was because I was hungry or if it was due to taking my time rather than inhaling the food, but it tasted so much better than last night!

A most excellent weekend!

I was pretty wiped out after being out in the sun all day. Considering I got a bit of walking and uphill trekking in, I’ll settle for that!

Mid-morning snack: banana
Lunch: Salad greens with 1 sliced carrot, 1 sliced hard-boiled egg, topped with sweet potato fries. This batch of fries was way better than the first one that we ate last night. It might be because I forgot to set the timer and they cooked better? Or because most things are tastier the next day?… Who knows, but I’m liking it.

do a major apartment cleaning/purge before we move (*assuming we are moving! still not definite!)
-creative writing assignments

Can we say PRODCUTIVE?!?!?! The highlight of the day was getting rid of tons and tons of papers that had accumulated in our filing cabinet. Once I got started I couldn’t stop—there was some major purging going on. Good purging. I also got together a decent stack of clothes to donate to Goodwill. Finally. (I’ve probably told myself, “Well, I might need that if…” a million times. It’s time to face reality that I will never wear that again!)….It’s not over yet though. There’s still more purging to do, but today was a great start.

The only thing left on my list is the creative writing assignment that is due tomorrow for my online class. I’m trying to decide between that and the updates I need to do to¬† my blog. I’m leaning towards the assignment–I didn’t do last week’s. (It’s ok–I’m auditing the class. You get to choose to do fun stuff like NOT doing homework!) But what’s the point in being in the class if I’m not going to work at it? Ahh-haa…..

Dinner: Leftover milanesa and mashed potatoes, and a salad.

C is for Chili

Hmmmm. I just finished a bowl of leftover vegetable chili from last night’s dinner. Filling and savory–it hit the spot.

Lunch: Vegetable chili: kidney beans, black beans, tomatoes, celery, carrots, garlic, and onions.

This just in:
“Snow Spotted in the Hill Country.” LOL! That’s the actual headline at KXAN.com right now. I know this is Texas, but still….it’s not Bigfoot we’re talking about here.
