Whew! I’ve been on my feet all night. P-R-O-D-U-C-T-I-V-E! I don’t think I’ll manage to hit up everything on my agenda, but I tried.

Tonight’s agenda:
clean house
-light grocery shopping (decided to save the time and work with what was in the fridge for tonight’s dinner)
-creative writing online critiques (still plan to do a few)
make week’s menu
-practice piano (probably won’t get around to this)
make banana bread

Snack: Small blueberry yogurt (non-organic)
Dinner: Brown rice topped with ground pepper and freshly grated parmesan cheese and a spinach salad with zucchini slices, sunflower seeds, shredded cabbage and a agave-dijon dressing
Dessert: Small blueberry yogurt (non-organic)

Time’s a wasting. How much more can I get done before bedtime?

Tasty tasty

Finally! I cleaned my workspace today in a major way. AND created a nice little space for my personal odds & ends that I keep here at work: utensils, condiments, dental care, etc! This cabinet was previously cluttered with papers and folders; I went through all of them and was able to get rid of the bulk of it.

By the way, that is NOT a bottle of wine 🙂 Well, it was once upon a time, but we converted it into to an olive oil dispenser.

-55 minutes at the gym: 15 minutes stretching/abs/core, 25 minutes legs, 15 arms.
-I also plan to run home from work, about 4 miles.

Mid-morning snack: 6 dried Cali figs
Pre-workout snack: a small yogurt with a cup of Kashi GO LEAN Crunch! Honey Almond Flax
Lunch: Salad grees with sprouted sunflower seeds and brown rice, drizzled in olive oil, and two slices of Alvaredo Street Bakery Sprouted Multi-Grain toast, drizzled in olive oil

50 minutes at the gym. 15 minutes stretching/abs,  20 minutes on legs, 12 minutes on arms, 3 minute stretching

Post work-out snack: I was starving, and wanted a little something to stave off the hunger for 30 minutes before lunch.  An adorable little apple and a dried Cali fig.

Lunch: Uh-oh. Am I in trouble?

These are not whole foods.

These are not healthy foods.

These are processed, artificial foods.


It get’s worse.

There’s a Diet Coke.

A plastic fork, styrofoam plate, foil. Green heart = black heart!

A few times a year, I get the Fried Rice Combo (fried rice, egg roll, medium soft drink) from the cafe in our building.  Bad as it is, I love it. This morning I was so excited, and so anxious because they seem to run out of this dish at lunchtime, that I went down to the cafe at 8:30 to pre-pay and reserve the FRC. Then I went back at 11:30 to remind the lady (of course she must think I’m completely crazy) to save me a FRC and that I would be back at 12:00…When I came down at 12:00, she had the dish already prepared for me and wrapped up to go. How sweet is she!

Anyway, I enjoyed every bite and drank every last drop of the Diet Coke. Truth be told, Diet Coke makes me feel like crap. It makes me bloated and I feel like I have liquid metal running through my veins. It’s a weird, and uncomfortable, feeling. And when I drink it with food, even worse. For the most part, I avoid drinking liquids with my meals because it impedes proper digestion. As you can see, today I made an exception (several). I don’t regret it, but I definitely feel the effects of the Diet Coke and fried food bubbling around in my stomach.

This was a pre-meditated violation of eating whole, healthy foods.  Not only do I confess, but I accept all punishments and penalties. I do not condone eating this food, but I do give myself a free pass with CULINARY CRAP every once in a while.

2 Step Omelet

Dinner duty was mine tonight. In theory. Lucas ended up making the Happy Rice, and I, the omelets.

2-Step Omelets:
Step 1: Chop fresh spinach leaves.
Step 2: Crack two eggs into a bowl and mix well.

Ok, there are a couple of additional steps (recipe below), but really, this is easy stuff.

Pre-dinner: A glass of red wine. I am loving the Wine Houdini. The wine stays good for at least 10 days!
Dinner: 1 spinach omelette and a side of Happy Rice.
Dessert: A serving of Swiss chocolate with nuts. (After my Chocolate Bar Hat Trick this past weekend, I probably should have said no…)

2 Step Omelets
(serves 2)

You need:
4 eggs
1/2 of a 9 oz bag of fresh spinach leaves
olive oil

Make 1 omelet at a time…

1) Chop spinach leaves into small, fine pieces
2) Beat two eggs in a small mixing bowl. Add salt and pepper.
3) Heat olive oil in a skillet or frying pan, over medium heat.
4) Once oil has thinned and spread throughout the pan, add the eggs to the pan.
5) When edges start to bubble and eggs appear half-way cooked, add spinach in a neat row down the middle of the pan. See above photo.
6) Gently lift one side of the omelet, and fold over the spinach. Do the same with the other side.
7) With care, flip entire omelet onto opposite side. Cook for a couple of minutes.
8) Ready to serve.

Good lunch

Whew. I am feeling sooo much better than I have over the past 4 days or so. I got some rest today, have been trying to put things in perspective, plus have gotten lots of kind words from family and friends. My problems were by no means grave or serious, but I’ve been really down about them, and well…it’s nice to feel better.

Stress level:

Lunch: Pretty much a repeat of last night. Salad greens & spinach with honey dijon dressing and a side of Happy Rice with 1 chopped Roma tomato.

A great lunch!

Hey, Thursday! You sure took your time getting here.

It has been a loooong week.

Ughh. I’m stressed. We still haven’t straightened things with the landlady of the duplex, so we haven’t signed a lease, so we don’t know if we are moving next weekend or not. I wanted to get a headstart on packing, but it doesn’t seem like a good idea in case things fall through.

But since we are hopeful that everything will work out with the duplex (and have been hopeful), we put our place up for rent on Craigslist. But no one has emailed (except for 1 guy that flaked. It’s been almost 2 weeks! 😦

Mid-morning snack: 2 dried cali figs and 4 dried medjool dates
Lunch: Leftover veggie souffle and brown rice
