Green Heart:
The muggy morning tempted us to hop in the car to get from point A (home) to point B (Thunderbird Coffee). However, in the spirit of Green Heart, we hopped on our bikes instead. Do I like arriving at a coffee house wet with sweat, wiping my face down with a napkin as I ask the barista about their specialty coffees? Not really. But it’s best to reduce when you can, and we could, so we did!

Fitness:
-60 minutes cycling (leisurely pace)
-ran 5 miles

Food:
Breakfast: A glass of fresh juice to start the day. Later, a hot mocha and a big ol’ cranberry muffin. Uh-oh.
Lunch: Whole grain toast topped with a tbs of crunchy peanut butter and drizzled with honey. Veggies? No where to be seen.
Dinner: Lucas made delicious chicken tacos…spelt tortillas with diced chicken, yellow and green onions, red peppers, and refried beans. I also had a side of brown rice mixed with olive oil, parsley and garlic.
Dessert: I need to bring back the Challenge. Lucas and I “shared” an alfajor, although I think I ate most of it.

Fitness:
I ended up running 5 miles. I usually like to run without music so I can clear my head, but today I took my Ipod with me and I have to admit it makes the run go by so much faster!

Food:
Snacks: A bite of a cookie cake I had made for Lucas’s birthday (the pre-challenge me would have had a nice slice); a small apple
Dinner: A salad of shredded carrots & cabbage, spinach leaves, chopped celery, brown rice, tossed in olive oil, salt pepper, and topped with a few chunks of mozzarella cheese; a small glass of Champagne
Dessert: I am pondering a couple of tablespoons of raisins & chocolate chips. Just to satisfy the sweet tooth (challenge-friendly!)

Fitness:
This evening’s weather was my kind of lovely: low, gray clouds and relentless rain. The climate was going to keep me indoors and without a workout, until Lucas mentioned he was making brownies. That was enough to get me out in the rain for a 4 mile jog—it takes some of the guilt out of the pleasure of decadent desserts!

What does one wear when they leave the house for a deliberate soaking? In my case, a dirty hat that was in the hamper waiting to be washing, a pair of shorts already worn to the gym, old sneakers awaiting a trip to the Nike outlet to be thrown in the bin for recycling shoes. Betcha I was a sight for sore eyes!

Food:
Snack: Tea and two slices of banana bread
Dinner: A large slice of vegetable quiche, made my Lucas
Dessert: Half a pint of Amy’s Mexican Vanilla, and one brownie. Then another brownie. Then one more. Oops. All that, plus a heaping portion of The Office on NBC.com (I caught up on 3 episodes!). Perfect night.

Eyes > stomach.

Waaaah.

Curry for three

My other little sister, Showbiz Liz, dropped by to borrow some 10 pound weights, which naturally I no longer need, because I am like, totally buff. Or lazy. One of the two……Ok….The latter. Just the latter.

There was plenty of curry to go around, so we tolerated her company at dinner.

Food:
Dinner: Curry. Lucas gets 100% kitchen credit.  Again. What have I been making lately? My breakfast. That’s about it. I have been slacking in a major way…..I had one bowl of curry, which included coconut milk, potatoes, sweet potatoes, onions, and ginger. The coconut and ginger had me at hello.

Dessert:
On the agenda: a cup of tea and a slice o’ banana bread

Fitness:
I ran to the Capitol and back….a little over 7 miles at an easy pace.

Green heart:
Rather than taking our other car with Lucas, yesterday I took the bus to pick up our car from the mechanic. (Well, not really the mechanic. It was serviced by an Austin Community College auto class. We paid for the part, which was about $100, but the labor was virtually nothing: $25. Niiiiiice).

8 Mile

Fitness:
I mapped out a route earlier on Google maps and set out for a 6 mile run (to the Texas State Capitol and back). Only, it turns out it was an 8 mile run! Double checked the mileage when I came back, and it was four each way. Sweet! No wonder my legs were like J-E-L-L-O!

A great run–through historic Hyde Park, UT campus, and a turn around at the Capitol near the edge of downtown. So many people out and about, something that I love about living in this area of Austin.

Food:
Dinner: Strawberry Fields Salad…Fresh spinach leaves tossed in olive oil and topped with sheep’s cheese, candied pecans, and sliced strawberries.

Food:
Breakfast: A cup o’ tea and a toasted onion bagel with two generous tablespoons of creamy peanut butter. I almost never eat bagels anymore, but I do love them, and when I saw the rows and rows of bagels (cranberry, chocolate chip, jalapeno, honey oat, you name it) staring at me from behind a glass case at Central Market, I had to take a couple home. I adore the onion & peanut butter combination. This stems from the days back at home when my Dad would buy the Blue Light Special onion bagels at Super K-Mart and would slather them with crunchy peanut butter. It’s a weird combo, but my tastebuds are in love.

Yesterday recap:
Lunch: Half of a leftover brie & smoked turkey sandwich, half a cup of chicken tortilla soup, a side of butter & sugar sweet potatoes.
Snack: Apple slices topped with creamy peanut butter and raisins.


Dinner: Half of a pork fajita burrito and chips and salsa at Chipotle
Dessert: Candied pecans and half of a chocolate wafer; tea

Fitness:
Nothing since Wednesday (I’m counting moving day as a day of mega fitness)….I plan to go on a run today in the new ‘hood! The big idea was to go for a run this morning, but I just got so into unpacking…aiming for the afternoon now.

Green heart:
Makes my heart flutter: Chipotle shares not only our food philosophy but also a love for Mother Earth. I snapped this photo, although my operation was soon shutdown by an off-duty employee….”Chipotle doesn’t want to have pictures all over the place.” Whatever, man. It’s called free publicity! Don’t you know I have thousands following this blog? Well, maybe it’s more like four people, but whatevs….I still love you, Chipotle.

Mood:
Grade A. Good night’s sleep. In bed at 9:45 and up at 6:45.

Food:
Breakfast: Lucas made me a glass of fresh juice (mostly carrots). I also whipped up a batch of oats-to-go and ate them at work.
Today’s oats:
-1/3 cup steel cut oats
-1 and 1/2 cup water
-3 tbs rolled oats
-1 tbs oat bran
-1 tbs ground flax seed
-2 tbs dried currants
-1 banana, sliced
-1 cup of carrot juice pulp
-2 tbs agave nectar
-a generous sprinkling of cinnamon

Recap from yesterday:

Fitness:
-50 minutes at gym (stretching, abs, arms, legs)
-4.5 mile run home (my first run in over a week. Felt good!)

Mid-afternoon snack: Granola bar
Pre-dinner: A handful of dried currants and a few forkfuls of leftover salad
Dinner: Spinach and mushroom quesadillas….spelt tortillas with spinach, mushrooms, and shredded cheese and Lucas’s homemade salsa. I had 6 triangles and a few swigs of beer.

Green heart:
I usually eat two meals at work, so naturally, I need napkins on a daily basis. But rather than use paper goods, I bring a cloth napkin from home. Reduce that paper waste!
