SMS: Roasted Pecan Cake with Caramel Orange Marmalade and Burnt Orange Buttercream

I loved how the cake itself turned out. It’s moist, flavorful, and simply delicious. The buttercream frosting didn’t turn out so well, it tasted way too buttery (even after I left out 1 stick of butter from the original recipe) and it was somewhat broken (maybe I overmixed or undermixed)….I made my own orange juice and marmalade, which turned out a bit bitter, I think due to my oranges…..Overall a fun recipe to make, but my fault it didn’t turn out as good as it should have been! The cake was still quite tasty, and I enjoyed a large slice, of course.

Breakfast: A superb bowl of oats this morning. So creamy and flavorful!
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/2 cup whole milk
-4 tbs Ezekiel Original
-1/2 cup Kashi Go Lean CRUNCH!
-1 large banana, mashed
-1 tbs crunch peanut butter
-a sprinkling of flaxseeds

No agave was necessary today. I actually forgot to put it in, and when I tasted the oatmeal, I realized it was sweet enough on its own. Sooo soooo good!

I put a small amount into this bowl (from a set of five….a Goodwill find from last year!) and ate it as I was rushing around getting ready. I took the rest as oats-to-go.

Sunny, just like it is outside.

Breakfast: I made a fresh juice with carrots, kale, celery, oranges, and ginger. Kale can be overpowering in a juice if you’re not used to it, so I used just a handful. I also whipped a batch of oats-to-go made with carrot pulp to take to work.

Yesterday recap:

Day off

Afternoon snack: Thick slice of banana bread and later apple slices sprinkled with cinnamon
Evening snack: Mate and alfajores that Lucas made (we each had one). Reminds me of “merienda” in Argentina!
Dinner:  A hearty homemade soup that Lucas made, and later celery sticks with crunchy peanut butter
