I’ve been in a bit of a blogging slump. Gone are the days of posting thrice daily. Quite frankly, it consumes precious time and energy, and let’s face it: it’s not exactly the most interesting material.

But I can’t just give it up. I still want the message of my blog to be out there: live well, eat whole & organic, and be as green as you can be. Maybe the direction of the blog will change, in fact I’m pretty sure it will, but for now, I’m forging ahead. I just might not cover as much distance as I did in the previous months. We shall see.

Food:
Breakfast: Two fried eggs with mozzarella cheese and two slices of toasted baguette topped with olive oil, parsley, and garlic
Snack: Two whole carrots; raisins
Lunch: Whole grain toast with crunchy peanut butter, one slice topped with Jan’s jam and the other topped with honey

Fitness:
Friday….went to the gym and later ran 4 miles after work
Saturday…..soccer game. We didn’t have any subs, so I played the whole game. This old lady was tired!
Sunday….plan to go on a run. 4 to 8 miles, not sure yet.

I’ve put on at least 5 pounds in the past few months, exercising less and eating more sweets.  Ellen, what gives? I have no good excuses. So I’ve created a little challenge for myself. I was going to call it the Lose Weight, Look Great Challenge or something like that, but that’s lame and overdone, so I’m going to call it like I see it….

The “I’m-28-and-have-not-had-kids-so-if-I-can’t-look-hot-now-when-will-I-ever?!? Challenge”.

I don’t want to get all crazy with a diet. I just can’t do diets. Don’t like them, don’t support them, especially for someone that is not technically overweight. Basically, I’m focusing on two things: I am trying to make my exercise more consistent and frequent. Everyone thinks I work out all the time, but that’s not true. Maybe 3 days or 4 days a week? Time to step it up. The second thing is cutting back on the ice cream, chocolate, etc. So far, so good. (It’s day 3 of the challenge).

-3 tbs Ezekiel Original
-2 tbs rolled oats
-2 tbs raisins
-1 tbs creamy peanut butter
-1 small banana, mashed

Breakfast: Oats-to-go. Today’s oats had:
-1/3 cup steel cut oats
-1 cup water
-splash of soy milk
-1 tbs oat bran
-2 tbs Ezekiel Original
-2 tbs raisins
-2 tbs rolled oats
-1 tbs creamy peanut butter
-1 banana, mashed

Really. I’m in such a bad mood. For your own good, stay out of my way.

What a day! Is it really 10:00 pm?

Fitness:
Ran 5 miles

Food:
Breakfast: Peanut Butter & Banana Oatmeal w/ raisins
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1 and 1/2 tablespoon rolled oats
-2 tbs Ezekiel Original
-2 tbs raisins (not counting the tons I ate while making the oatmeal)
-1 tbs creamy peanut butter
-1/2 large banana, mashed
Being the classy lady that I am, I ate this straight out of the pot as I was rushing around getting ready.

Lunch: Leftover spaghetti topped with a simple homemade tomato sauce and pureed spinach

Dinner: Famished after my run, I avoided snacking and hopped in the shower for quick cold one. Brrr! The gas services man should be by tomorrow, which means we will FINALLY have hot water and a working stove and oven (we’ve been cooking on a portable single burner, the one I use at work)….The L-man had dinner on the table as soon as I was done. Good timing! For dinner, I ate three veggie tacos (spelt tortillas topped with sauteed green peppers & onions, wild rice, fresh spinach, and homemade salsa. Sooooo good.

Green heart:
This one is on Lucas. We had to take one of our cars in for a repair. Instead of taking two cars and driving back together, Lucas did a major Green Heart and went solo, taking the bus on the return and then later to pick up the car. Got to give him props.

Yesterday recap:
Fitness: 1 hour kayaking (leisurely); 2 hour hike on a 3 mile trail
Food:
Breakfast: Whole grain toast w/ creamy peanut butter
Lunch: Two huge blueberry pancakes at Magnolia Cafe
Dinner: Lucas made whole wheat spaghetti with a homemade tomato sauce, topped with freshly grated parmesan. I wanted some greens with my dinner, so I pureed some fresh spinach leaves and added them to my dish.

Food:
Breakfast: A cup o’ tea and a toasted onion bagel with two generous tablespoons of creamy peanut butter. I almost never eat bagels anymore, but I do love them, and when I saw the rows and rows of bagels (cranberry, chocolate chip, jalapeno, honey oat, you name it) staring at me from behind a glass case at Central Market, I had to take a couple home. I adore the onion & peanut butter combination. This stems from the days back at home when my Dad would buy the Blue Light Special onion bagels at Super K-Mart and would slather them with crunchy peanut butter. It’s a weird combo, but my tastebuds are in love.

Yesterday recap:
Lunch: Half of a leftover brie & smoked turkey sandwich, half a cup of chicken tortilla soup, a side of butter & sugar sweet potatoes.
Snack: Apple slices topped with creamy peanut butter and raisins.


Dinner: Half of a pork fajita burrito and chips and salsa at Chipotle
Dessert: Candied pecans and half of a chocolate wafer; tea

Fitness:
Nothing since Wednesday (I’m counting moving day as a day of mega fitness)….I plan to go on a run today in the new ‘hood! The big idea was to go for a run this morning, but I just got so into unpacking…aiming for the afternoon now.

Green heart:
Makes my heart flutter: Chipotle shares not only our food philosophy but also a love for Mother Earth. I snapped this photo, although my operation was soon shutdown by an off-duty employee….”Chipotle doesn’t want to have pictures all over the place.” Whatever, man. It’s called free publicity! Don’t you know I have thousands following this blog? Well, maybe it’s more like four people, but whatevs….I still love you, Chipotle.

Excelente. I got such a good night’s sleep, and that makes a world of difference in how my day goes…I went to bed last night at 9:15, and got up at 6:15 this morning.

Food:
Breakfast: Fresh juice and later whole grain toast topped with peanut butter, and a cup o’ tea.
Mid-morning snack: Hot mocha
Lunch: Leftover Happy Rice, lentil salad, garbanzo salad.


Dying to know what I’ve been dining on the past day or so? Were you lying awake at night, wondering?

I know, I know.

So here’s a (partial) recap!

(Note: That goo in the jar isn’t a science experiment. It’s breakfast. I ran out of to-go cups since I’ve been running home from work and leaving everything behind. The jar sufficed, although it didn’t keep the oats as warm as my travel cups do).

I’m so well-rested! I was exhausted last night and fell asleep early for once!

Food:
Breakfast: Lucas made me a fresh juice. I’m not sure what was it in exactly, but probably carrots, orange, apple, celery, ginger…..I made a batch of oats-to-go for work:
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/4 cup milk
-1 tbs crunch peanut butter
-1 cup carrot juice pulp
-2 tbs Ezekiel Original
-1 tbs agave nectar
-a sprinkling of cinnamon



Recap from yesterday:

Food:
Dinner: a handful of pistacchios and Fage Greek 2% yogurt with 3 tbs Ezekiel Original and a very generous drizzling of agave nectar. Too tired and not that hungry, so this was the perfect dinner.

Breakfast: I made a batch of oats-to-go. Today’s oatmeal had
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/3 cup milk
-2 tbs rolled oats (non-organic)
-2 tbs Ezekiel Original
-a sprinkling of cinnamon
-1 and 1/2 tbs crunch peanut butter
-1 tbs agave nectar

I love the addition of peanut butter. It makes the oatmeal creamy and flavorful.

Monday.

Food:
Recap from yesterday: I came home and had a little happy hour for myself: white wine, cheese from Spain, homemade bread, and olive oil.

Last night was a stare-at-the-tv kind of night. I even when out and bought Ben & Jerry’s to go along with it. I might have eaten the whole pint! Not something I really want to admit, but well, it’s part of the blog. I’ve strayed from the path to healthy living and eating the last couple of days, but well, I’m back on the path again so here we go…

Breakfast: Lucas brought me a juice in bed. How good is this man? The fresh juice had carrots, apple, lemon, ginger, and I think some grapefruit. Later at work, I had Ezekiel toast with crunchy peanut butter and agave nectar.

TGIF, and I mean it. This week has been e-t-e-r-n-a-l.

Cirque du Soleil was AMAZING last night!!!!! No surprise there, but honestly, Alegria” has to be the best show on Earth. I laughed, I cried. Oh, let me tell you, the first 10 minutes I was bawling! This show has some emotional ties to me, and hearing the music live really touched my heart and soul.

I don’t know what was better–the singing, the music, the costumes, the performances.  It was beyond perfection; it was simply astonishing. Truly, $40 is a bargain to see such a show! If “Alegria” comes to your city, see it!

Food:

Dinner last night: This was rushed, as we had to eat quickly before we left for the show. Lucas roasted peppers, onions, potatoes, and sweet potatoes in the oven……At the show we were starving at the intermission, so we shared an order of fries…..and when we got home, I had another small serving of the oven-baked veggies.

Breakfast: My stomach felt so heavy this morning. I started out with a fresh juice (carrots, celery, apple, lemon, ginger) that Lucas made for me. Later at work, I had Ezekiel Low-Sodium (blah! I had sprinkle it with salt) toast with 2 tbs crunchy peanut butter.
