Hi, Mom!

I began my day with 1/2 squeezed lemon in hot water (you can squeeze less if 1/2 lemon is too strong). Lemon cleanses the liver. I read somewhere that some urologist once said if everyone did this, he would be out of a job.

I add the squeezed lemon juice into a coffee cup or to-go mug, and then add a 1/3 of cold water. Then I add the hot water. Let it set for a minute so the lemon has time to even out.

Then, I made a fresh juice with kale, celery, carrot, orange and granny apple.

You remember the easy steps, right?
..the carrot and the fruit gives it a nice sweet taste, so the kale isn’t overpowering at all.

I usually juice my fruit, then dump out the fiber, and juice the veggies. I save the veggie fiber for later! (You’ll see…!)

Obviously, you can do any combination you want. The kale makes it nice and green (no matter how much or how little you put in) but the color doesn’t necessarily dictate the sweetness of the juice.

That’s what I would consider a very healthy start personally to my morning. For later (breakfast or a mid-morning snack): celery sticks and almond butter, and some pumpkin seeds and almonds, or toast with almond butter.

Remember the veggie fiber I saved? You can add it into anything. Here, I had a bowl of quinoa, avocado slices and added the fiber with it. I mixed and mashed a little bit. Good way to get that fiber back in!

Quinoa is (I think) a super food. It’s a great source of protein. It’s soo easy to make, and you can keep it at room temp if you bring it to work, and it lasts it lasts a couple of days in the fridge.

How easy to make? This easy. 1:2 ratio. For example, add one cup of quinoa and two cups of water into a small/medium sauce pan. Bring to rolling boil over medium/medium-high heat. When it begins to boil, cover and reduce to low-medium heat and cook for 15 minutes. Turn off heat and let sit for 5 minutes. Then remove from heat. Voila.
