Holy cow.

Look at these photos!

Craziness. They look straight out of a 1970s cookbook!

Quite possibly….no, without a doubt, the ugliest photos on this blog. What happened?!?! Hahahaha! Ug-ly.

(Yes, those are lions and tigers you see printed on the tabletop. Wild!)

N-e-waze….it was a great morning! I did a bit of housecleaning, ran 6.2 at Townlake (ran into Jenni from OutofControlFatroll.com again!), where, might I add, it was bitter cold! The air was burning cheeks, ears, and fingers. Brrrr! It was a great run though, and not a lot of people out, which can be nice. Afterwards I headed to Gold’s Gym Downtown for a quick shower, then met up with Kate and Baby D at Magnolia Cafe.

The camera does lie, because those pancakes were freaking awesome. Coffee was good, too. And not only is MC super chill, but it’s cheap! 2 huge pancakes for $3.95. Me likes.

Post-juice: Two slices of Lucas’s homemade banana bread.
Lunch: To heck with the balanced meal! 1 cup of coffee with cream and sugar and 2 big-as-yo’-face buttermilk pancakes with sliced cinnamon apples and chopped pecans folded in. Topped with countless tbs of maple syrup. Oh boy.

Kate and I chatted about this and that, including our plans to start a healthy living meet-up group on MeetUp.com. I am excited! We are in the beginning stages, but I will post more info once things are rolling. Our goal for the 1st meet-up is in early March…..Meanwhile, Baby D won the affections of two nearby fellas. (I think he was just tired of the women in his company).

Next up was a stop at Whole Foods. They have a chocolate stand?kiosk?counter? where they sell fudge, truffles, espresso beans, and more. It’s no doubt my favorite spot in the store. Amongst the eye candy were some beautifully decorated candied apples. One was covered in pink and white candied crystals–gorgeous! But at $7.99 a pop, I think it should just be admired from afar.

I plan to have another productive day, I’m off to do a few things around the house, and later some writing…..

A little bit zombie

Breakfast: A fresh juice of carrots, orange, apple and ginger. I want to go for a run soon, so I’m keeping it light.

Woah. The colors are so different. The one on the right is more accurate. Inaccuracies like this may soon change!  A new camera for my birthday is in the works! Very excited.

Can we say PRODCUTIVE?!?!?! The highlight of the day was getting rid of tons and tons of papers that had accumulated in our filing cabinet. Once I got started I couldn’t stop—there was some major purging going on. Good purging. I also got together a decent stack of clothes to donate to Goodwill. Finally. (I’ve probably told myself, “Well, I might need that if…” a million times. It’s time to face reality that I will never wear that again!)….It’s not over yet though. There’s still more purging to do, but today was a great start.

The only thing left on my list is the creative writing assignment that is due tomorrow for my online class. I’m trying to decide between that and the updates I need to do to  my blog. I’m leaning towards the assignment–I didn’t do last week’s. (It’s ok–I’m auditing the class. You get to choose to do fun stuff like NOT doing homework!) But what’s the point in being in the class if I’m not going to work at it? Ahh-haa…..

Dinner: Leftover milanesa and mashed potatoes, and a salad.

Breakfast Part B: A cup of Ordinary Oats: steel cut oats with 2 tbs of rolled oats (non-organic) and 2 tbs Ezekiel Original. I added 1 tbs of agave nectar to sweeten the deal.
“Lunch”: Knowing I would be squeezing in a run sooner or later, I didn’t want to eat too much this afternoon…so I had some whole grain toast with a creamy blend of peanut butter and honey.

Refreshed. Great night’s sleep! I fell asleep on the couch (again) after dinner…..crawled into a real bed around 10:00, woke up this morning at 9:00. Ahhhh!

Speaking of dinner….last night was amazing comfort food. More below…

Breakfast: A banana, and later a glass of fresh juice (3 oranges, 1 apple, some carrot, and a slice of ginger).

Recap of Yesterday:
Gym – 45 minutes of abs and strength training (focus on legs) and 30 minutes jogging on the treadmill

Snacks: Apple, banana
Dinner: Milanesa (a thin cut of breaded red meat), mashed potatoes, sauteed carrots & zucchini—-by Lucas. The milanesa and m’taters are the ultimate in comfort food!

Things to do today

C is for Chili

Hmmmm. I just finished a bowl of leftover vegetable chili from last night’s dinner. Filling and savory–it hit the spot.

Lunch: Vegetable chili: kidney beans, black beans, tomatoes, celery, carrots, garlic, and onions.

This just in:
“Snow Spotted in the Hill Country.” LOL! That’s the actual headline at KXAN.com right now. I know this is Texas, but still….it’s not Bigfoot we’re talking about here.

The wind was blowing. The rain was falling. The air was cold. The sky was gray. I woke up this morning, hit snooze three times, and said “screw it, I’m taking a vacation day.” After making the necessary phone calls, I lay in bed, drinking some juice, trying to decide if I would go back to sleep or get up and do stuff around the house.

Then……….oh snap.

I suddenly realized I had a very important phone call to make at work. Meaning, my spur-of-the-moment vacation day was no longer….But, at least I remembered, because it would have been bad, bad news if I hadn’t!

Breakfast: Lucas made me a fresh juice. I didn’t ask what was in it, but probably carrots, oranges, apple, lemon, ginger.
Later at work, I had Ezekiel toast with a glorious blend of crunchy peanut butter and honey. There wasn’t that much PB left in the jar, so at home I had poured honey on top of it, stirred well, and had a thick, smooth, creamy topping for my toast. Delicioso.

My workouts have been so minimal this week. Today I’m going to try to hit the gym for some weights & cardio.

Hey, Thursday! You sure took your time getting here.

It has been a loooong week.

Ughh. I’m stressed. We still haven’t straightened things with the landlady of the duplex, so we haven’t signed a lease, so we don’t know if we are moving next weekend or not. I wanted to get a headstart on packing, but it doesn’t seem like a good idea in case things fall through.

But since we are hopeful that everything will work out with the duplex (and have been hopeful), we put our place up for rent on Craigslist. But no one has emailed (except for 1 guy that flaked. It’s been almost 2 weeks! 😦

Mid-morning snack: 2 dried cali figs and 4 dried medjool dates
Lunch: Leftover veggie souffle and brown rice

Out of it

Man, I’ve been out of it. I didn’t take pictures at lunch yesterday (good excuse: I was with colleagues), I fell asleep on the couch last night so I didn’t do a dinner post, and I FORGOT to take pictures of breakfast today. What the cuss?

Annoyed. Very annoyed. Not with the above, but with a work email I got from a pushy woman. Ugh.

Breakfast: I made juice for Lucas and me. Mine had 4 oranges, 2 carrots, and a bit of ginger. It was fabulous! I also made steel cut oats with agave and a 1/2 cup of carrot & orange pulp mixed in for fiber. Even though these suckers were completely squeezed dry, the orange pulp still has some flavor. It’s a bit bitter.

Yesterday Recap:

I squeezed in an easy workout between work and an evening meeting. 50 minutes walking on the treadmill. I started out running, but I was still full from lunch, so I had to walk. I think I a little over 3 miles.

Lunch: A margherita pizza from Mandola’s. I had a whole one. Again. And it was soooo worth it.
Dinner: Lucas made a vegetable souffle. I had a serving, plus brown rice, plus tomato slices drizzle in olive oil.
Dessert: Oh man. I had like, a half cup of chocolate chips. At least!

I think I got a solid 8 hours last night—10:30-6:30. I feel rested.

Breakfast: Oats-to-go. I made carrot cake oatmeal (changes: no walnuts and I used 1 whole medium carrot) and put it into this travel mug. An hour later–it’s at the perfect temperature!

This travel mug is the best! I bought it at Goodwill for $1.75 last year. It’s true stainless steel, none of that plastic stuff on the inside. It says BMW on the other side, which is kind of funny, since I drive a 1997 Toyota Camry…..Speaking of Goodwill, I was in there a few weeks ago. Man, they have gotten expensive! Target is cheaper than a lot of their stuff. I love that the money from my purchases goes to a good cause, but to be honest, I’m not going to spend more on something that is used! It needs to be a good deal–then everybody wins.  Me thinks.

For over 2 years, I have been communicating via phone and e-mail with Ana, one of our study abroad contacts in Costa Rica. Today I get to meet in her person! She flew into Austin last night, and is here for a week or so to experience the ceramics program at our school….I’m excited to meet her and have a face-to-face conversation.
