Mood:
Grade A. Good night’s sleep. In bed at 9:45 and up at 6:45.

Food:
Breakfast: Lucas made me a glass of fresh juice (mostly carrots). I also whipped up a batch of oats-to-go and ate them at work.
Today’s oats:
-1/3 cup steel cut oats
-1 and 1/2 cup water
-3 tbs rolled oats
-1 tbs oat bran
-1 tbs ground flax seed
-2 tbs dried currants
-1 banana, sliced
-1 cup of carrot juice pulp
-2 tbs agave nectar
-a generous sprinkling of cinnamon

Recap from yesterday:

Fitness:
-50 minutes at gym (stretching, abs, arms, legs)
-4.5 mile run home (my first run in over a week. Felt good!)

Mid-afternoon snack: Granola bar
Pre-dinner: A handful of dried currants and a few forkfuls of leftover salad
Dinner: Spinach and mushroom quesadillas….spelt tortillas with spinach, mushrooms, and shredded cheese and Lucas’s homemade salsa. I had 6 triangles and a few swigs of beer.

Green heart:
I usually eat two meals at work, so naturally, I need napkins on a daily basis. But rather than use paper goods, I bring a cloth napkin from home. Reduce that paper waste!

Mood:
A-
I’m so well-rested! I was exhausted last night and fell asleep early for once!

Food:
Breakfast: Lucas made me a fresh juice. I’m not sure what was it in exactly, but probably carrots, orange, apple, celery, ginger…..I made a batch of oats-to-go for work:
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/4 cup milk
-1 tbs crunch peanut butter
-1 cup carrot juice pulp
-2 tbs Ezekiel Original
-1 tbs agave nectar
-a sprinkling of cinnamon

Food:
Dinner: a handful of pistacchios and Fage Greek 2% yogurt with 3 tbs Ezekiel Original and a very generous drizzling of agave nectar. Too tired and not that hungry, so this was the perfect dinner.

Mood:
Sing-songy. I’ve covered tracks from Jesus Christ Superstar, Alegria, Danny Boy and others of mom’s old Irish bedtime songs, oldies, Bob Marley. A musical massacre with the best of intentions. Lucas said he was ready to call a divorce lawyer.

Food:
Breakfast: Lucas brought me fresh juice, bedside. Knowing I would have to get out of bed to photograph the juice before I could drink it, I just laid in bed…and stayed…and stayed….a little longer….long enough to where Lucas came back into the room with a pink spoon so he could stir the juice, as the bits of apple pulp tend to settle at the top (what a thoughtful man)…anyways, the photo finally happened……and later oatmeal.

Pulpy Peanut Butter Oatmeal
-1/3 cup steel cut oats
-1 cup water
-1/3 cup milk
-4 tbs Ezekiel Original
-1 tbs of crunchy peanut butter (there may have been a couple of spoonfuls before that didn’t make it into the pot)
-1 tbs ground sesame
-1 cup of carrot juice pulp
-1 tbs agave nectar
-cinnamon (non-organic)


Today:
We were going to go to Boggy Creek Farm, but I had to blog. Sorry, Lucas!

-soccer game (I haven’t worked out 4 days in a row. This is going to be rough.)
-clean house
-bake for Sweet Melissa Sundays
-dinner at Jezebel with Liz and Brittaney

The maintenance guy was supposed to be at my apartment at 8:00 this morning to fix a leaky faucet and loose handle in the bathroom. He called at 8:00 on the dot to say he would be an hour late, and I can’t say that I mind! I get to have a relaxing breakfast and may even work on one of my creative writing assignments for this week. I love that my Monday work morning is turning out this way!

Mood:
Good. I went to bed late, but was up at 6:30 to file those papers, vacuum and tidy up a bit.

Food:
Breakfast: a) fresh juice by Lucas. Carrots and honestly I don’t know what else. It was very carroty. There may have been an orange. b) Pulp Fiction Oatmeal:
-1/3 cup steel cut oats
-2 tbs rolled oats (non-organic)
-2 tbs of Ezekiel Original
-1 tbs Jumbo Flame raisins
-1/2 cup of carrot juice pulp
-3 seconds worth of poured whole milk (eek! I don’t know. 1/3 cup?)
-1 tbs of agave nectar

The pulp does NOTHING for the oatmeal in terms of taste. But it’s some extra fiber that would have been thrown out otherwise, so why not? I’ve read about food bloggers using it in muffins, in salad, etc. I’d like to give the muffins a try!..The whole milk gave the oatmeal a lot of body and fluff, which was nice! The raisins also worked well with others.

Mood:
Mostly sunny

Working towards the 9 pm – 5 am sleeping schedule has been going pretty well overall. Last night I was in bed by 10:00 and asleep soon after.  I set the alarm for 6:00, but I was not ready to wake up when 6:00 came around. Following a series of snooze-hitting and alarm-resetting, I finally rose at 6:55. But that’s ok–after my measly four hours of sleep yesterday, I think my body needed the extra time.

Food:
Breakfast: a) Lucas made me a juice from carrots, celery, apple, lemon, and ginger.
b) I made some oatmeal to take to work (I put it in a travel mug, which did a great job of keeping it warm). The oatmeal had about a cup of pulp leftover from the juicing process.  The pulp alone doesn’t have any taste, but it’s pure fiber, which is good. I mixed that in with the 1/3 cup (dry)  of steel cut oats, 2 tbs (dry) of rolled oats, 2 tbs of Ezekiel Original, agave nectar, and cinnamon. I like the Carrot Cake Oatmeal more, but this was good, too.

What’s up with this warm weather in January? Oh, that’s right. This is Texas.
