My Daily Juice


Breakfast: Lucas made fresh juice for us this morning. It had carrots, apples, oranges, and lemon. Delicious! There is nothing quite like a fresh juice.

Now if only I felt as fresh as this juice….

It’s been a while since juice has made an appearance on BTGH.

So here you have it. Back my popular demand. Or…my demand.

Breakfast: Fresh juice (oranges, carrots, grapefruit, ginger, apple)
Mid-morning snacks: 3 Turkish figs and a large apple
Lunch: Oven-baked sweet potatoes and potatoes, finely shredded carrots and spinach leaves, beet salad
Snack: A bag of potato chips and a few sips of Diet Coke….horrible…blech
Dinner: Finely shredded carrots and beet salad, 1/2 piece of naan, two pieces of vegetable quiche

Time to call it a night….

We spent the day unpacking and decorating….almost there!

Lunch: Fresh juice made from 6 carrots, 1 large apple, half of a large orange, half of a lemon.
Snack: Cultural Revolution plain yogurt with 2 tbs agave nectar and a few tablespoons of Ezekiel original; several candied pecans

Tired with a side of relaxed

Lunch: I came home on my lunch break! I can get used to this…..Lucas had a glass of fresh juice waiting for me. The juice had carrots, apple, orange, lemon, celery.

Dinner: I used my first Groupon! $15 for $30 worth of dinner at Galaxy Cafe. My PSA for the day: if you live in or near one of the (participating) major US city, sign up for Groupon! It’s free, costs you nothing, no obligations–you decide when you want to take advantage of the great deals that they offer. I pick and choose very carefully. It’s easy to want to buy all of the deals, but I try to purchase only the things I would normally use. Check out their website for a better idea of how Groupon works.

Galaxy Cafe. For the decor, think the Jetsons…..

Upscale fast food that takes a little longer. Choose a menu, order at the cashier, find a seat, and a super friendly staff member brings you your meal.

I had the Brie and Smoked Turkey Sandwich: smoked turkey and creamy french brie with mixed greens, tomato & chipotle apricot jam on a grilled baguette. I chose Sweet Potato Fries as my side. I just can’t get enough, I just can’t get enough.

Dear, delicious sweet potato fries…

And in the street……..What exactly defines a “Hard Core American”? Hmmmm…..

Might the owner of the above Jeep be related to the owner of this truck (snapped on a street in Corsicana)?

“Heritage, not hate.” Um, really?

Speaking of Corsicana, this past weekend I was there and went to Two Doors Down, an AWESOME coffee shop that I wish was there when I lived in C-town. Photos to come…loved that place and the people–so friendly! Only in Texas!

Grade A. Good night’s sleep. In bed at 9:45 and up at 6:45.

Breakfast: Lucas made me a glass of fresh juice (mostly carrots). I also whipped up a batch of oats-to-go and ate them at work.
Today’s oats:
-1/3 cup steel cut oats
-1 and 1/2 cup water
-3 tbs rolled oats
-1 tbs oat bran
-1 tbs ground flax seed
-2 tbs dried currants
-1 banana, sliced
-1 cup of carrot juice pulp
-2 tbs agave nectar
-a generous sprinkling of cinnamon

Recap from yesterday:

-50 minutes at gym (stretching, abs, arms, legs)
-4.5 mile run home (my first run in over a week. Felt good!)

Mid-afternoon snack: Granola bar
Pre-dinner: A handful of dried currants and a few forkfuls of leftover salad
Dinner: Spinach and mushroom quesadillas….spelt tortillas with spinach, mushrooms, and shredded cheese and Lucas’s homemade salsa. I had 6 triangles and a few swigs of beer.

Green heart:
I usually eat two meals at work, so naturally, I need napkins on a daily basis. But rather than use paper goods, I bring a cloth napkin from home. Reduce that paper waste!

I feel like a human being again after an exhausting series of flights that made up my return trip from Spain. I was awake for 24 hours straight over the weekend!! I went to bed at 8:30 last night and got up at 5:45 this morning. I feel really good and well-rested.

Breakfast: A mug of fresh juice and later a bowl of oatmeal. Today’s oatmeal had:
-1/3 cup steel cut oats
-1 cup water
– a splash of whole milk
-1 tbs ground flaxseed
-2 tbs rolled oats
-1 carrot, finely shredded
– 1 tbs crunchy peanut butter
-1/2 banana, mashed
-a sprinkling of cinnamon

“What are you looking at?”….and sometimes “What a beautiful sunshiney day!” and still “zzzzzzz”

Breakfast: Lucas made me a delicious fruit juice (apples, oranges) with carrots. Later, I had a fabulous bowl of oatmeal:
-1/3 cup steel cut oats
-1 cup water
-1/3 cup soy milk
-2 tbs Ezekiel Original
-1 tbs ground sesame
-2 tbs plump raisins
-1 tbs crunchy peanut butter
-a generous sprinkling of cinnamon
-1 tbs agave nectar

Green heart:
We ordered a new set of checks from our bank, but in the address printed on the checks, the zip code is incorrect. I thought about calling the bank up to request a new set with the corrected zip code, but that would mean we’d have to toss the checks. A waste of paper. So I decided we could settle for just scratching out the one wrong digit in the zip code and writing the right one above it. Classy? No. Green heart? Yes!
