-Ran 30 minutes in my neighborhood hills. Saw a gorgeous sunset and some cute deer.
-My Netflix workout (40 minutes boxing moves & abs)

Afternoon snack: 2 teensy-weensy pieces of dark chocolate…and…. 4 Medjool dates. I’ve said it once and I’ll say it again. They taste like PASTRIES!
Pre-dinner: A large apple
Dinner: I made chicken tacos; I had two. Ezekiel tortillas topped with lemon-pepper chicken, spinach leaves, and sauteed onions. Fabuloso!
Dessert: Peppermint tea and a thick slice of banana bread

Weekend Recap:
Where did we leave off?….Here’s a nice little summary for you.

Fitness: Day off
Afternoon snack: Lucas and I shared an oatmeal raisin cookie and large coffee with half & half at JP’s Java.
Dinner: Spaghetti with meat sauce
Dessert: Strawberry gelato sweetend with agave nectar—made in our juicer! That juicer can do anything. Ate my gelatto while watching “Amadeus.”  I forgot how long that movie was–but it’s so good! So is the song from the 80s. We were singing it all weekend thanks to the movie!

Fitness: 10k at Town Lake
Brunch: Whole Foods: A breakfast taco (spelt tortilla with vegan chorizo, black beans, cheese) and later Lucas and I split a humongous Carmelita bar. Ooooohhhh my goodness. The best. Hands down. Ammmmazing. I love WF Carmelita bars.
Pre-dinner: Salad greens with Happy Rice.
Dinner: I made oven-roasted vegetables (potatoes, Japanese yam, onions, carrots) and Kale Chips.

Kale Chips!! Don’t be fooled by their healthy, green appearance. Kale chips = potato chips without the guilt.

Kale Chips!! Finally I know what all of those food bloggers have been fussing about.

Kale Chips are nothing short of a miracle. Basically, it’s kale (a leafy green) tossed in salt and olive oil, topped with some Parmesan cheese, and baked in the oven. After baking, they become potato chips. Basically. If you blindfolded me, I wouldn’t be able to tell the difference between the two. Honestly. Try it. Do yourself a favor. You will be amazed. Really!

Before the oven….

Light, crispy, melt-in-your-mouth salty goodness. Unbelievably tasty.

This is a recipe I got from Kath’s blog:

  • Preheat oven to about 375*
  • Use about 1 OXO salad spinner’s worth of kale (which was a stuffed grocery store veggie bag). Tear the leaves off the thick stems into bite size pieces. Spread out on cookie sheets.
  • Drizzle with about 2 tsp of olive oil
  • Sprinkle with Parmesan, Asiago or your seasonings of choice. Plus a sprinkle of kosher salt.
  • Bake for about 15 minutes, until edges are brown and kale is crispy when moved in pan.

Good! I slept like a baby; I’m rested and ready to seize the day.

Cirque du Soleil is in town to perform “Alegria”! We have tickets in the cheap seats (and at $40 each, still not that cheap) but we are excited! We’ve been to two performances before (one in New York and one in Connecticut) but have never seen “Alegria”. The music of this particular show has a lot of meaning to me, as my host family from when I was studying abroad in college in Argentina introduced it to me, and the CD was playing all the time in their house. It was like the soundtrack to Lucas’s and my budding romance!

Breakfast: I whipped up a batch of oats-to-go for Lucas and me. This is what today’s batch had, serves 2.
-2/3 cup steel cut oats
-1 and 1/2 cups water
-3/4 cup soymilk
-4 tbs oat bran
-4 tbs Ezekiel Original
-2 tbs dried currants
-2 tbs flaxseeds
-2 tbs agave nectar

My hamstrings are so sore, but I don’t know why!

Partly-zombie, but ok

I’m doing better with working towards the 9 to 5. Last night was 10:15-6:15.

Breakfast: I made a nice bowl of thick oatmeal. I finished it in 6 minutes! Woah!
-1/3 cup of steel oats
-1 and 1/4 cup of water
-1/3 cup of soymilk
-2 tbs Ezekiel Original
-2 tbs oat  bran
-1.5 tbs dried currants
-2 tbs agave nectar

I still haven’t ordered my birthday camera yet. I want to do a bit more research, to see if the Rebel is the best one or if there are other DSLRs out there that are better and also reasonably priced…but I can’t wait to get a better camera! Hopefully it will shoot well in low light.

What a great day! I met up with Liz, Kate, and Kate’s adorable baby Daniel at the farmer’s market, then we walked over for a coffee at Progress. I treated myself to a hot mocha; it was good! Some mochas are either too heavy on the chocolate or else the coffee is too strong; this one had the perfect balance…..Then I went for a nice, long run at Town Lake. Running really clears my head, and I had a lot of thoughts that had to be cleared today. Thank goodness! It was a beautiful day too, sunny and blue skies, and a strong breeze…..I wrapped the outing up with a quick trip to Whole Foods for various items. I think I’m getting a little jaded, because going to WF isn’t as fun as it used to be. Austin has the BEST WF in the US, but we’ve been going there so much lately that its charms are starting to wear off. Oh no! I still love it, but maybe the honeymoon phase has run its course.

Today was kind of weird with the meals because of the timing. I never really had lunch, and I’m about to go play an indoor soccer game, so I don’t want to have dinner yet. I did have a snack to tide me over. I plan to eat a BIG salad when I get back!

8 mile run at Town Lake.
Next up: indoor soccer game (40 minutes–no subs tonight! 1 sub, thankfully!)

Lunch: Esentially, it was the hot mocha.
Post-run: 7 dried Cali figs
Early evening snack: Cup of Fage 2% with a teeny bit of Ezekiel Original and rolled oats, and a generous drizzle of agave nectar

I brought some plastic vegetable bags and containers from home and “reused” them for my purchases at WF.

Me, that’s for sure. It’s 10:34 and I’m zonked. I can barely keep my eyes open to write this post. Trust me, once I finish I am hitting the hay. So zzzzzzleeeepy.

Afternoon snacks: A couple of dried dates and 2 tbs of peanut butter straight from the jar. How I love PB.
Dinner: 1 whole margherita pizza from Mandola’s. Sooooo good. The crust is  paper thin and the cheese is BARELY existent…I have to justify my whole pizza somehow!!!

60 minutes of toning exercises at home

Good night!

Oh, and I almost forgot—
Dessert: 1 serving of orange-flavored chocolate. Really good. I forget the brand. Got it at Whole Foods. Have you been to their chocolate section? Pretty darn great…..Hee, hee. One serving makes it sound so small….in reality, 1 serving size is half the bar:)

Good, but a repeat of the bad night’s sleep I got on Monday. I got up after 7:00 this morning. Luckily, Lucas made me breakfast….I still had to rush, and ended up taking the bowl with me in the car on the way to the bus stop. Talk about fast food! (haha, ok, that was lame).

Breakfast: A bowl of hot cereal: Ezekiel Original and rolled oats and soymilk
Mid-morning snack: 5 dried Medjool dates

Feliz Friday!

Lunch: Leftover linguini with meat sauce.
Post-lunch: 4 dried Medjool dates and 2 dried Cali figs

I spent my lunch break looking at place for rent in Austin. Moving is exciting, but stressful at the same time. We love where we live now, but we need more space and the management company is a joke–they have caused me so much stress and hassle over the past two years. Boo.

Austin, why do you have to be such a hot spot? Why does the property value of your homes have to be so high? Why do P.O.S. 2-bedrooms get to rent for $1000 a month? Why!?!?

But….I love Austin. So what can I do?
