Mood:
Solid.

Even though I took off from work and went to bed relatively late last night (11:45 pm), I was up at 7:30 this morning. I still feel pretty well rested and love that I’m up and at ’em early to seize the day….well, seizing the day so far has been trying to get my work laptop to connect to WiFi in my parent’s house. Not working! What the cuss? My personal laptop connects just fine, so I’m not sure what the deal is.

Anyway, I took off from work because my crazy and fabulous jet-setting older sister is visiting from overseas. I haven’t seen her since last summer, so I wanted to maximize that quality family time. I’m sensitive like that. 🙂 Today should be pretty low-key….we’ll probably have lunch with my mom and then drive to the outlets so Jocelyn can get some new running shoes.

The drive to Corsicana last night was scary. The rain was pelting my car and the headlights were reflecting of the rain so I had to drive with my lowlights on, which are really weak, so sometimes I felt like I was driving in the dark. AND not to mention the dumb a$$ truck drivers who feel the need to ride your a$$ down the highway or barrel past you at 80 mph in monsoon like rains and douse your windshield so that you are blinded and scared out of your mind. Not appreciated.

Anyways…

Food:
Breakfast: I made a nice bowl of oatmeal. With the sweetness of the dried currants and banana, I didn’t need to add any agave nectar.

Recap from yesterday:
Dinner: Vegetable quiche, made by Lucas. I had two pieces.

And for dessert: sliced banana with cinnamon and agave and later a strawberry ice cream cone

Fitness:
Quick 20 minute circuit workout. Wasn’t that great.

Mood:
Grade A. Good night’s sleep. In bed at 9:45 and up at 6:45.

Food:
Breakfast: Lucas made me a glass of fresh juice (mostly carrots). I also whipped up a batch of oats-to-go and ate them at work.
Today’s oats:
-1/3 cup steel cut oats
-1 and 1/2 cup water
-3 tbs rolled oats
-1 tbs oat bran
-1 tbs ground flax seed
-2 tbs dried currants
-1 banana, sliced
-1 cup of carrot juice pulp
-2 tbs agave nectar
-a generous sprinkling of cinnamon

Recap from yesterday:

Fitness:
-50 minutes at gym (stretching, abs, arms, legs)
-4.5 mile run home (my first run in over a week. Felt good!)

Mid-afternoon snack: Granola bar
Pre-dinner: A handful of dried currants and a few forkfuls of leftover salad
Dinner: Spinach and mushroom quesadillas….spelt tortillas with spinach, mushrooms, and shredded cheese and Lucas’s homemade salsa. I had 6 triangles and a few swigs of beer.

Green heart:
I usually eat two meals at work, so naturally, I need napkins on a daily basis. But rather than use paper goods, I bring a cloth napkin from home. Reduce that paper waste!

Mood:

I feel like a human being again after an exhausting series of flights that made up my return trip from Spain. I was awake for 24 hours straight over the weekend!! I went to bed at 8:30 last night and got up at 5:45 this morning. I feel really good and well-rested.

Breakfast: A mug of fresh juice and later a bowl of oatmeal. Today’s oatmeal had:
-1/3 cup steel cut oats
-1 cup water
– a splash of whole milk
-1 tbs ground flaxseed
-2 tbs rolled oats
-1 carrot, finely shredded
– 1 tbs crunchy peanut butter
-1/2 banana, mashed
-a sprinkling of cinnamon

Mood:
“What are you looking at?”….and sometimes “What a beautiful sunshiney day!” and still “zzzzzzz”

Food:
Breakfast: Lucas made me a delicious fruit juice (apples, oranges) with carrots. Later, I had a fabulous bowl of oatmeal:
-1/3 cup steel cut oats
-1 cup water
-1/3 cup soy milk
-2 tbs Ezekiel Original
-1 tbs ground sesame
-2 tbs plump raisins
-1 tbs crunchy peanut butter
-a generous sprinkling of cinnamon
-1 tbs agave nectar



Green heart:
We ordered a new set of checks from our bank, but in the address printed on the checks, the zip code is incorrect. I thought about calling the bank up to request a new set with the corrected zip code, but that would mean we’d have to toss the checks. A waste of paper. So I decided we could settle for just scratching out the one wrong digit in the zip code and writing the right one above it. Classy? No. Green heart? Yes!

Breakfast: Oats-to-go. Todays’ oatmeal had:
-1/3 cup steel cut oats
-1 cup water
-1/3 cup soy milk
-2 tbs Ezekiel Original
-1 carrot, shredded
-3 heaping tsp ground sesame
-2 tbs plump raisins
-cinnamon
-generous drizzle of agave nectar
Lunch: Leftover pasta & tomato sauce.

The week went by so fast. Awesome.

I’m so well-rested! I was exhausted last night and fell asleep early for once!

Food:
Breakfast: Lucas made me a fresh juice. I’m not sure what was it in exactly, but probably carrots, orange, apple, celery, ginger…..I made a batch of oats-to-go for work:
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/4 cup milk
-1 tbs crunch peanut butter
-1 cup carrot juice pulp
-2 tbs Ezekiel Original
-1 tbs agave nectar
-a sprinkling of cinnamon

Food:
Dinner: a handful of pistacchios and Fage Greek 2% yogurt with 3 tbs Ezekiel Original and a very generous drizzling of agave nectar. Too tired and not that hungry, so this was the perfect dinner.

Breakfast: I made a batch of oats-to-go. Today’s oatmeal had
-1/3 cup steel cut oats
-1 and 1/4 cup water
-1/3 cup milk
-2 tbs rolled oats (non-organic)
-2 tbs Ezekiel Original
-a sprinkling of cinnamon
-1 and 1/2 tbs crunch peanut butter
-1 tbs agave nectar

I love the addition of peanut butter. It makes the oatmeal creamy and flavorful.

Monday.
