Hey, Thursday! You sure took your time getting here.

It has been a loooong week.

Ughh. I’m stressed. We still haven’t straightened things with the landlady of the duplex, so we haven’t signed a lease, so we don’t know if we are moving next weekend or not. I wanted to get a headstart on packing, but it doesn’t seem like a good idea in case things fall through.

But since we are hopeful that everything will work out with the duplex (and have been hopeful), we put our place up for rent on Craigslist. But no one has emailed (except for 1 guy that flaked. It’s been almost 2 weeks! 😦

Food:
Mid-morning snack: 2 dried cali figs and 4 dried medjool dates
Lunch: Leftover veggie souffle and brown rice

Out of it

Man, I’ve been out of it. I didn’t take pictures at lunch yesterday (good excuse: I was with colleagues), I fell asleep on the couch last night so I didn’t do a dinner post, and I FORGOT to take pictures of breakfast today. What the cuss?

Mood:
Annoyed. Very annoyed. Not with the above, but with a work email I got from a pushy woman. Ugh.

Food:
Breakfast: I made juice for Lucas and me. Mine had 4 oranges, 2 carrots, and a bit of ginger. It was fabulous! I also made steel cut oats with agave and a 1/2 cup of carrot & orange pulp mixed in for fiber. Even though these suckers were completely squeezed dry, the orange pulp still has some flavor. It’s a bit bitter.

Yesterday Recap:

Fitness:
I squeezed in an easy workout between work and an evening meeting. 50 minutes walking on the treadmill. I started out running, but I was still full from lunch, so I had to walk. I think I a little over 3 miles.

Food:
Lunch: A margherita pizza from Mandola’s. I had a whole one. Again. And it was soooo worth it.
Dinner: Lucas made a vegetable souffle. I had a serving, plus brown rice, plus tomato slices drizzle in olive oil.
Dessert: Oh man. I had like, a half cup of chocolate chips. At least!

Mood:
I think I got a solid 8 hours last night—10:30-6:30. I feel rested.

Food:
Breakfast: Oats-to-go. I made carrot cake oatmeal (changes: no walnuts and I used 1 whole medium carrot) and put it into this travel mug. An hour later–it’s at the perfect temperature!

This travel mug is the best! I bought it at Goodwill for $1.75 last year. It’s true stainless steel, none of that plastic stuff on the inside. It says BMW on the other side, which is kind of funny, since I drive a 1997 Toyota Camry…..Speaking of Goodwill, I was in there a few weeks ago. Man, they have gotten expensive! Target is cheaper than a lot of their stuff. I love that the money from my purchases goes to a good cause, but to be honest, I’m not going to spend more on something that is used! It needs to be a good deal–then everybody wins.  Me thinks.

For over 2 years, I have been communicating via phone and e-mail with Ana, one of our study abroad contacts in Costa Rica. Today I get to meet in her person! She flew into Austin last night, and is here for a week or so to experience the ceramics program at our school….I’m excited to meet her and have a face-to-face conversation.

Fitness:
60 minutes of weights/toning at the gym

Food:
Afternoon snacks: a juicy orange; celery with peanut butter (apparently, Lucas didn’t know this is a common American snack!)
Dinner: Lucas made a delicious dinner tonight. I had a big serving of broccoli-spinach penne with garlic and freshly grated parmesan

Green heart:
The faucet in our bathtub has been dripping, so we are collecting the water in a basin and using it to water plants.

Eat and Repeat

Leftovers. They always taste better the second time around.

Food:
Mid-morning snack: 5 cali figs and 4 medjool dates
Lunch: Two tomato-basil chicken tacos with fresh spinach on whole grain tortillas.


The lady from Craigslist showed last night! We finally got rid of the rest of our wedding reception stuff. 35 bones baby!

Gorgeous

The 9:00-5:00 plan has been thrown off a little lately. For a while there, I was in bed by 10 and up by 6…..Last night I was in bed at 10:30, and up at 6:45. Meh.

I had a nice little chat with my mom last night. She is so funny. She was telling me a story about how when she was walking around San Antonio last weekend, she got lost and ended up in a sketchy part of town. Walking down the street, she saw a homeless man coming her way. She didn’t want to be harassed for money or anything, so she said she starting talking out loud so he would think she was crazy and leave her alone. Oh, Mom. Too funny!

Mood:
3.5 stars

Food:
Breakfast: I wanted to make oatmeal, but I needed something quick this morning. A cup of Fage 2% Greek yogurt with 4 tbs of Ezekiel Original and 1 tbs of rolled oats, drizzled with agave. Yummmm.

Good taco

Fitness:
None. I had planned to do toning exercises at home, but I was wiped out. Usually I try to talk myself into a workout, but today I didn’t even try. I think I did too much yesterday and ate too little today and yesterday, that my body just needed a rest.

Food:
Afternoon snack: Trail mix from the vending machine.
Pre-Dinner: Lucas and I were starving, so we split a toasted ham & cheese sandwich.
Dinner: Two tomato-basil chicken tacos with caramelized onions and spinach leaves, on Ezekiel whole wheat tortillas.

This was a great combination! The spinach leaves were fresh and crisp, the onions just sweet enough, the chicken was tangy from the tomato/basil spices. This was the first time I used Ezekiel tortillas. They were harder than your usual tortilla, and when I heated them on low in a skillet, they curled and stiffened a bit. Perhaps not the ideal tortilla for tacos, but definitely worth it since they are so much healthier and tasty enough.

Still no word on the duplex. The landlord is supposed to call us….I’m also waiting on a lady from Craigslist to show up to buy some stuff leftover from our wedding reception (as in 2.5 years ago). I hope she shows! If not, I might have to go on another Craigslist Etiquette rant.

Dessert: 3 tbs of chocolate chips
